Preserving Pomegranates: Juice, Jelly, Molasses & More!

Pomegranates are in season! These jewel-like fruits are packed with tart flavor and bright color—perfect for preserving as the holidays approach. 🎉

This free, live online class from the University of California Master Food Preservers Online Delivery Program introduces safe, research-based methods for freezing, dehydrating, juicing, and making jelly or molasses with pomegranates.

Learn to capture the bright, tangy essence of this autumn fruit to enjoy long after the season ends.

 

Learning Outcomes of the Class

By the end of this class, participants will be able to:

  • Extract and freeze pomegranate seeds (also called arils).
  • Dehydrate seeds to make tangy anardana.
  • Make and safely store pomegranate juice by freezing or canning.
  • Turn juice into pomegranate jelly.
  • Reduce juice into pomegranate molasses—a rich, tart syrup used in sweet and savory dishes.
  • Apply USDA- and UC-approved preservation methods safely and confidently.
