Dial gauge pressure canners need to be tested annually to ensure dial gauges are accurate. If your dial gauge is not accurate, it is not correctly reading pressure, which may result in under- or over-processing and unsafe food.
Note: only Presto and old All American canners with a non-removable petcock are considered dial gauge canners. All other canners, even if they have a dial, are considered a weighted gauge canner, and the dial is used as a guide to the pressure and to show when the pressure drops to 0; their gauges do not need to be tested.
